Classic American smash burgers on the Cibeles roundabout, from Carlos, an owner-cook with 12 years of experience who blends ribeye and sirloin in house and bakes the brioche daily. The classic cheeseburger runs around 99 pesos; crispy chicken comes with hot honey or with peanut butter and bacon jam. The interior has a Berlin vibe, decorated by three local artists.

What Instinto Hamburguesas is

Instinto Hamburguesas is a small burger counter at Plaza Villa de Madrid 6, in Roma Norte, Mexico City. The address is unusually easy to find: Plaza Villa de Madrid is the roundabout that holds the Fuente de Cibeles, the copy of the Madrid fountain that gives the corner of Roma Norte its name. The restaurant faces it.

What it sells is a narrow, American-style menu done properly: smash burgers on brioche, a crispy chicken sandwich, a few fried sides, one vegetarian option and a dessert. The house line is sin rodeos, elige, pide, devora, roughly no detours, choose, order, eat, which is an accurate description of the operation.

The price is the headline. A classic cheeseburger is 99 pesos, about five and a half dollars, in a neighbourhood where a burger of this type usually costs two to three times that. The room is small, decorated by three local artists, and closer in feel to a Berlin snack bar than to the polished burger restaurants further along Álvaro Obregón.

Who is behind it

The owner is a cook named Carlos, with roughly twelve years of experience, and he works the counter himself. The two decisions that follow from an owner-operator kitchen are both on the plate: the beef is a blend of ribeye and sirloin ground in house rather than bought as pre-formed patties, and the brioche buns are baked on site every day.

That is the whole reason the economics work. Grinding your own blend and baking your own bread costs labour rather than money, which is how a burger this cheap avoids tasting cheap.

How the menu works

The menu is short and sits on one board.

  • Cheeseburger Clásica, 99 MXN: beef, American cheese, house sauce, brioche. The benchmark.
  • Doble Doble, 150 MXN: the same with two patties.
  • Crispy Chicken, 158 MXN: fried chicken on brioche, either with hot honey, pickles and mayonnaise, or with peanut butter and bacon jam. The menu lists the second one as Peanut Butter and Jelly.
  • Vegetariana, 155 MXN: the one meat-free burger.
  • Parmesan Grilled Cheese, 108 MXN: no patty, just cheese, done well.
  • Sides: fries 58 MXN, sweet potato sticks, fries with cheese and bacon, Mac and Cheese in the New York style 98 MXN, chicharrón, a black salad at 89 MXN.
  • Dessert: fried Oreos, 110 MXN.
  • Combos: Combo Instinto, a cheeseburger with fries and a house soda, 168 MXN. Combo Pareja, two burgers, 245 MXN.

What to order

I have not filmed a full run through the menu here, so this section is built from the restaurant’s own list and its own descriptions rather than a plate-by-plate account of a meal.

Start with the Cheeseburger Clásica, because at 99 pesos it is both the cheapest item and the clearest test of whether the house grind and the house bun are doing their job. If you want more, the Doble Doble is the same burger scaled up rather than a different one. The Crispy Chicken with hot honey is the sandwich the menu leads with on the chicken side, and the peanut butter and bacon jam version is the one that gets talked about.

What it costs

These are prices from the restaurant’s own menu in September 2026, in Mexican pesos. Delivery platforms list higher figures and add commission, so ordering direct is cheaper.

ItemPrice
Cheeseburger Clásica99 MXN, about 5.50 USD
Doble Doble150 MXN, about 8 USD
Crispy Chicken Hot Honey158 MXN, about 9 USD
Peanut Butter and Jelly chicken158 MXN, about 9 USD
Vegetariana155 MXN, about 8.50 USD
Parmesan Grilled Cheese108 MXN, about 6 USD
Fries58 MXN
Mac and Cheese, New York style98 MXN
Fried Oreos110 MXN
Combo Instinto, burger, fries and soda168 MXN, about 9 USD
Combo Pareja, two burgers245 MXN, about 13 USD

A burger, fries and a drink for one person comes in under 200 pesos, about eleven dollars. Two people eating a burger each with one side to share land around 350 pesos. That puts Instinto at the cheap end of sit-down eating in Roma Norte rather than merely cheap for a burger.

How to visit

No bookings, no queue system worth planning around.

  • Walk up and order at the counter. The room is small, so seating is first come.
  • Ordering in: the restaurant runs its own direct ordering system and says plainly that it avoids the aggregator commission. It is also on Rappi and Uber Eats at higher prices.
  • Instagram: @hinstinto is where the menu changes and the hours get posted.
  • Hours: the venue lists daily 12:00 to 23:00. Delivery hours are shorter, around 13:00 to 22:00.
  • Timing: the quiet hours are mid afternoon. Evening is busier, and the counter is not large.

Getting there

  • Address: Plaza Villa de Madrid 6, colonia Roma Norte, 06700 Cuauhtémoc, Mexico City.
  • The landmark: the Fuente de Cibeles sits in the middle of Plaza Villa de Madrid. If you can see the fountain, you are there.
  • Metro: Insurgentes on Line 1 is about seven minutes on foot, Sevilla about ten.
  • Metrobús: the Durango stop on Line 1 along Insurgentes is the closest, with Álvaro Obregón a little further.
  • On foot: a few minutes from Calle Colima and from Avenida Álvaro Obregón, the two main restaurant streets in Roma Norte.
  • Parking: the roundabout is busy and street parking is scarce. Walk or take a ride hail.

Before you go

  • Order direct rather than through an app. The same burger costs noticeably more on the delivery platforms.
  • Start with the 99 peso classic. It is the dish the kitchen is built around.
  • The room is small. At peak evening hours, plan on taking it away or eating at the counter.
  • Cibeles is the landmark, not a street number. Aim for the fountain.
  • Cash and card both work, but small counters in Roma Norte occasionally have terminal problems, so carry some cash.
  • Pair it with a walk round the fountain. Crumbl is a few minutes away on Durango if you want dessert afterwards.
  • Check the hours before you go. The hours on this page come from the venue’s public listings, which drift, so confirm on Google Maps or the venue’s own channels before a special trip.

Frequently asked questions

Where is Instinto Hamburguesas in Mexico City?+

Instinto Hamburguesas is at Plaza Villa de Madrid 6, colonia Roma Norte, 06700 Cuauhtémoc, Mexico City. Plaza Villa de Madrid is the roundabout that holds the Fuente de Cibeles, the replica of the Madrid fountain, so the address is literally on the circle. Insurgentes Metro on Line 1 is about a seven-minute walk.

How much is a burger at Instinto Hamburguesas?+

The Cheeseburger Clásica is 99 MXN, roughly 5.50 US dollars, on the restaurant's own menu. The Doble Doble is 150 MXN, the Crispy Chicken Hot Honey and the Peanut Butter and Jelly are 158 MXN each, and the vegetarian burger is 155 MXN. Fries start at 58 MXN and the Combo Instinto, a cheeseburger with fries and a house soda, is 168 MXN.

What are Instinto Hamburguesas' opening hours?+

The restaurant's own site lists daily service from 12:00 to 23:00. Delivery platforms show a shorter window, generally around 13:00 to 22:00, which is normal because delivery hours are usually narrower than counter hours. If you are going late, check @hinstinto first.

What meat do they use at Instinto Hamburguesas?+

The patties are a blend of ribeye and sirloin ground in house rather than bought pre-formed, and the brioche buns are baked daily on site. That combination is the reason a 99 peso burger here holds up against considerably more expensive ones elsewhere in Roma Norte.

What should I order at Instinto Hamburguesas?+

The Cheeseburger Clásica is the benchmark and the cheapest way to judge the kitchen. The Doble Doble is the same idea with two patties. On the chicken side, the Crispy Chicken comes either with hot honey or with peanut butter and bacon jam, and the menu also lists a Parmesan grilled cheese, a Mac and Cheese in the New York style and fried Oreos for dessert.

Is Instinto Hamburguesas vegetarian friendly?+

There is one vegetarian burger, listed at 155 MXN, plus the Parmesan grilled cheese, the fries, the sweet potato fries, the Mac and Cheese and a salad. So a vegetarian can eat at Instinto Hamburguesas, but the menu is built around beef and the vegetarian options are a smaller corner of it.

Do you need a reservation at Instinto Hamburguesas?+

No. Instinto Hamburguesas is a counter operation with a small room, so you order and either sit where there is space or take it away. The restaurant pushes its own ordering system rather than the delivery aggregators, on the grounds that it avoids the platform commission, which is worth knowing if you are ordering in.

Who owns Instinto Hamburguesas?+

The owner is a cook called Carlos, with around twelve years of kitchen experience, who works the counter himself. The interior was decorated by three local artists and reads closer to a Berlin snack bar than a Mexico City burger joint. That mix of an owner-operator kitchen and an artist-built room is the character of the place.
